Wholesome Winter Vegetable Soup
1 Tablespoon Olive/Rapeseed/Coconut Oil
300g Chopped Winter Vegetables (We used Carrot, Celery, Parsnip, Leeks, Onions)
200g Potato (or Sweet potato if you prefer)
1 Litre Vegetable Stock
1/2 Tablespoon Parsley
Salt & Pepper
In a large pan heat the oil and add the chopped vegetables and potato, cook for 3-4 mins until soft. Add the stock and gently simmer for 20 mins. Season with the parsley, salt and pepper to taste. Serve and enjoy!
